1 cup soy milk OR coconut
milk OR nut milk, heated to blood warm
1 Tablespoon. dried yeast, stirred in (only use fresh yeast or red star dry yeast
as all the rest have a palm oil derivative in them.)
100ml maple syrup
130g coconut sugar
85mls apple sauce OR ½ mashed banana OR 85mls
of macadamia or avocado oil
Add yeast to warm milk,
stir well and add syrup and sugar. Let sit until bubbly and foamy. Beat in egg
replacer ingredient (whichever one you chose). Then add the following ;
1 1/2 cups wheat flour
1/2 cup spelt flour
1 teaspoon salt
2 teaspoon ground cinnamon,
1 teaspoon ground
cardamom

tablespoons of Cacao (or cocoa) powder
1 handful of dried blueberries (can substitute any chopped dried fruit)
1 handful of diced chopped walnuts (can substitute any nuts)
1 handful
of chopped vegan and palm oil free dark chocolate.
Stir well and then turn out
onto floured board and add more flour as needed until the dough is well kneaded
and smooth, stretchy and not too sticky. Roll into an oiled bowl and
cover in a warm place and let rise until doubled. Punch down and form into 9
rolls and place into an oiled baking pan. Let rise again, about 20 minutes. If
you want to pipe a cross on top of the bun then do it now. Mix a little flour
with water until you get a paste thick enough to pipe then pipe on. You don’t have
to pipe on a cross or you may like top get creative and pipe a peace sign on or
the word love or the initials of someone, it can be whatever you like. Then
brush with some maple syrup and bake at 375 degrees for about 25 minutes until
well browned.
